New Restaurant Opens at Greek Peak Mountain Resort

Trax Pub & Grill, one of the most recent projects of Marc Stemerman and John Meier, new owners of Greek Peak Mountain Resort and Hope Lake Lodge, opened on Friday, December 13th. Trax, which used to be Orion’s Pub, has been completely remodeled and features a shiny new bar with twenty new beer taps that include some local brews; new booths; and a brand-new pellet pizza oven for firing tasty brick oven pizzas. There is seating for up to 250 people at Trax.
Doug Clark, the new chef at the mountain resort, joined the Greek Peak team on August 12th. Doug brings 30 years of experience to Greek Peak’s several dining venues, including the Acorn Grill and Bobcat Lounge. He has done tours as chef of many restaurants, predominantly in the Syracuse area. “I came down and I talked with the new owners and some of the management here,” Doug said, “And they really wanted me to come down here and bring the dining venues up to ‘resort’ level; so I came here to do just that.”
Indeed, Doug has been very busy upgrading menus, changing over ingredients, writing recipes, and hiring and training cooks to prepare the new dishes, as well as hiring wait staff to serve them. “Our recipes now include fresh, local produce, whereas they might not have, previously,” he said.
Trax’s new menu features reasonably priced grab-&-go fare designed for the busy skier. The menu includes appetizers such as poutine, fried mac & cheese, and wings. Soups, salads, sandwiches, and entrées, of course, are among the menu’s offerings, as well as nine varieties of hand tossed pizzas, including the “Be your own pizza artist” pizza for $10, plus toppings.
Though it has yet to be built, Doug is excited about the new deck. The proposed deck will be a three-tier, 7,000 square foot heated outdoor deck that will extend from Trax across the creek with steps leading to the base of the mountain. “The deck is going to be huge,” he said. “In the summer we’re planning on having concerts out there. Some of them may even last an entire weekend.”
Overall, Doug is looking forward to doing new events and watching Greek Peak Mountain Resort grow. “These new owners are great; I feed off of their enthusiasm. If they’re happy, I’m happy.”
