Country Moose Cuisine Corner – Hawaiian Chicken Chili

- 1/2 stick butter or margarine
- 1 onion, chopped
- 1 large can diced tomatoes
- 10-15 cloves garlic (4-5 tablespoons), minced
- 3-4 stalks celery, chopped fine
- 1 green bell pepper, diced
- 1-2 small cans Water Chestnuts, loosely chopped
- 1/2 small can Chipotle Peppers, diced or puréed
- 3 tablespoons Chili Powder
- 1 tablespoon Cumin
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- 1 teaspoon Ground Ginger
- 1 large jar Picante Sauce (or Salsa)
- 1 packet Taco Sauce
- 1 bottle Honey BBQ Sauce
- 1 bottle Chili Sauce
- 3 Tablespoons Brown Sugar (if desired)
- 1 large can Tomato Paste
- 3 cans Chili Beans
- 1 large can Crushed Pineapple
- 2 cans whole kernel corn
- 1 large can Pineapple Chunks
- 1 can Pineapple Tidbits
- 4-6 Boneless Skinless Chicken Breasts, boiled and cubed up
Bring 4-6 Chicken breasts to boil in separate pot. Once done, remove from water and let cool on a plate.
In a LARGE pot, melt butter and add onion, peppers, garlic, and celery and sauté until soft. Add diced tomatoes and let simmer. In a blender, place Chipotle peppers and pulse until finely pureed and add to pot. Add Water Chestnuts, Chili Powder, Cumin, Salt, Pepper, Ginger, Picante Sauce, Taco Sauce packet, BBQ Sauce, Chili Sauce, Brown Sugar, and Tomato Paste. Simmer 15-20 minutes until well cooked. Add Chili Beans, Crushed Pineapple, Pineapple Chunks, and Corn. Bring to boil, and add cubed chicken breast meat. Simmer until well cooked and enjoy!
This recipe makes a large amount. Let cool and put in containers and put in the freezer. Bring one out in the morning for lunch.

- Twist of Lime
