ONCO Fermentations – Tully’s Own Microbrewery and Tasting Room

Yes, there is a brewery in Tully!
Open since March 15, ONCO Fermentations is a farm brewery brewing classic, experimental, and wild/mixed fermentations. Located behind Applied Concepts on Route 281 just outside the Village of Tully, owners Brian and Erin Bullard have created a space they are calling “cozy warehouse industrial”, complete with glass garage doors that open to let the air in while visitors sample a rotating selection of house made beers.
Using ingredients from the seasons, from regional farms, Founder and Head Brewer Brian Bullard’s beers will be ever evolving. He looks forward to pouring a pint for you and sharing the stories about the ingredients, farmers, and process behind each fermentation.
Brian’s initial beers have included King’s Corner (a New York cream ale) and its sister, Coconut King (think coconut cream pie in a glass); Dark Smoothie (an oatmeal stout); Flaming Oscar (a specialty New York IPA with ginger and orange peel); and soft, fruity New England style IPAs. He has showcased a hopped Saison and is getting ready to launch the Songs of the Saison series (first up is the base honey Saison, split into a Saison with honey with hibiscus).
Brian’s passion is creating beers that are fermented or aged in wine and spirit barrels – look for wild ales aged on fruits such as cherries, blueberries, raspberries, and pluots to be highlighted in the future. As a farm brewery ONCO also serves other New York craft beer, wine, and cider hand selected by Brian and Erin from their favorite Friends in Fermentation. The owners are looking to add New York spirits and possibly mead in the future.
A firm believer that small businesses form the background of a vibrant community and proponent of the local New York craft brewery movement, Founder and Tasting Room Manager Erin Bullard is eager to create a welcoming space for our Cortland and Onondaga County neighbors and tourists of the fermented.
Both Brian and Erin strive to greet every customer with a smile and are eager to tell you about their beers. The owners are very approachable and want you to try before you buy, especially if you are not familiar with a style of beer or want to go out of your comfort zone. They encourage that and love talking about beer.
ONCO and guest beers are available in 5 oz tasters (individually or by the flight) as well as 10 oz and 16 oz pours (depending on the beer). The brewery is not filling growlers but instead offers 16 oz cans to go of all ONCO beers that can be bought in any quantity, mix and match, subject to availability.
The tasting room is family friendly. At this point while Brian and Erin love doggies they will only be permitted in the outside seating areas. As spring moves to summer outdoor seating and game areas will be expanded, and a deck is planned off two of the three glass garage doors that you will find open on warm days. ONCO’s online event calendar is filling up fast with food trucks stopping by and live music. Visitors are always welcome to bring their own picnic or to order from local restaurants (there are menus in the tap room).
